Preparation: Dissolve yeast in water, knead with flour, sugar, and eggs into a dough. Let the dough rest (at least 1 hour). Roll out, spread with lard, roll up and shape into a spiral. Let rise another 3–4 hours. Bake at 170°C (340°F) for about 15 minutes, then sprinkle with powdered sugar.

Ensaimada Mallorca

Bullit de Peix with Arroz a Banda

Ingredients:

1 kg fish (e.g., monkfish, red mullet)

4 potatoes

2 tomatoes

2 garlic cloves

1 onion

200 g rice

Saffron, salt, pepper, oil

Preparation: Simmer fish and vegetables in a pot with water, salt, and saffron for about 30 minutes. Remove fish and potatoes and serve them. Use the broth for the rice: sauté 200 g of rice in oil, add broth, and cook for 15 minutes.

Tip: Serve with aioli!
